Raspberry Poppyseed Dressing

I've been on a making my own dressing kick- one of my favorites that I've made over and over is this Raspberry Poppyseed. I'm a big fan of regular poppyseed dressing but this just has a hint of raspberry and adds a different twist on your salads.

Raspberry Poppyseed

3 Tbsp red onion
3 Tbsp raspberry jam
1/4 C. sugar
1/2 C. red wine vinegar
1 Tbsp honey mustard
1/2 tsp salt
Blend the above. I use an impression blender and it works great!
Add in 1/2 C vegetable oil two tablespoons at a time bleeding well after each.
Stir in 1 Tbsp of poppyseed

my favorite chocolate chip cookie

I've tried many chocolate chip cookie recipes, my mom makes the best chocolate chip cookies and yet when I moved out and tried making different recipes (including hers) it just didn't have what I was looking for. I've blamed it on the butter and then the oven but it just came down to putting that one secret ingredient in my cookies and finally I have a moist soft chocolate chip cookie!


My friend gave this cookie recipe with pudding awhile ago, I used it here and there but now it is my all time go to-lots have asked me for it... so here it is! I'm passing it along so you can all enjoy them as much as my family :) 

Pudding Chocolate Chip Cookies

Preheat oven to 350

In Kitchen Aid: 
1 vanilla pudding mix (can use chocolate or in the fall I will use a pumpkin to switch things up a bit)
1/4 cup white sugar
3/4 cup brown sugar
1 cup butter, softened

Beat butter, pudding mix, and sugars

Add in 2 eggs, stir until just incorporated 
Add 1 tsp vanilla plus a little extra never hurt anyone

Stir in dry ingredients
2 cups flour-plus a little more if you feel like dough is too sticky, but if you add too much you will have dough-ball cookies
1 tsp baking soda
1/2 tsp salt

If you feel like Betty you can sift dry ingredients otherwise just dump and stir. 

Mix in 1 bag of chocolate chips. 

Heres the trick-DO NOT OVERBAKE.
I have a convection oven, preheated to 350 and I bake 7-8 minutes. Leave set on pan 2 minutes. Sometimes when you take them out the middle will look not quite ready but leave them on the pan and they will be just fine. Plus these keep great in the freezer and will be amazing if you thaw out or stick in the microwave for a few seconds.

Trix Krispies

A rainbow twist on kids favorite "Rice Krispie" Treat! Try it with Trix Cereal to brighten things up during these wintery days :) 



Trix Krispies

4 Tbsp butter
3 C. mini marshmallows
10 C. Trix cereal


Step 1: Place butter and marshmallows in a large glass bowl and microwave for 2-3 minutes to melt. Stir well.

Step 2: Mix in the Trix cereal and stir.

Step 3: Pour into 9x13 pan and press down with a spoon

Step 4: Cut into squares and serve.
